Banana Walnut Cake.. Yummmmm

Over-ripe bananas need not be thrown away anymore.. :).. There is an option to turn all that ripe pulpy mess (ewwwwww) into a delicious mouth-watering cake (yummmmm).. Tastes amazing with tea or a glass of milk. Enjoy!!




Serves 8

Ingredients

All purpose flour - 2 1/4 cup
Sugar, granulated - 1 cup

Butter            - 1 cup, 8 oz
Milk              - 2/3 cup
Eggs              - 3
Over-ripe bananas -3 (Add one extra for more banana flavor)
Vanilla essense   - 1 Tsp
Cinnamon          - 1/2 Tsp (optional)
Baking soda       - 2 Tsp
Salt              - 3/4 Tsp
Walnut, chopped   - 2/3 cup

Steps

Pre-heat oven to 350 F. Grease a 13 X 9-inch rectangular pan or two 9-inch round pans

Dry Ingredients - Mix the flour, baking soda, cinnamon and salt. Set aside covered.
Mash the bananas till you get a paste-like texture.
Wet Ingredients - Take a bowl and start by whisking melted butter and sugar till creamy
Beat in the eggs one at a time while whisking, add the mashed bananas and vanilla essence


Mixing the wet and dry - Add a portion of flour mixture into wet batter and gently mix. Now add a portion of the milk and mix. Repeat this till you're done adding both.
Finally add in the walnuts and give the batter a final stir, gently (we do not want to over-mix the batter, just ensure all ingredients are incorporated)
Pour batter into pan(s)
Bake for 35-40 minutes
At 35 minutes, do a tooth-pick test, if it comes out clean, remove, cool and store either at cool room temp. or in fridge.
